I fell in love with sourdough about 4 months ago, and quickly found out about discard recipes and made ALL the things sourdough. If you’re one the sourdough bandwagon, these waffles are for you. They don’t need any wait time, they are simply mix and bake!
All you need is sourdough starter – this can either be active or discard, eggs, butter, milk, flour, sugar, baking powder and salt. And of course a waffle iron. I got a cheap heart shaped waffle iron from Kmart, and it’s worked perfectly well!
My kids love these waffles, I make a batch and keep them in the fridge – they have them for breakfast, as a snacks or they make great lunchbox fillers with a bit of jam or honey ontop! If you’re at home, a quick warm up in the toaster to get the crunch back, and then load with some icecream and maple syrup for a delicious sweet dessert, or some protein yoghurt and berries for a easy delicious breakfast!
The recipe is so simple and easy to whip up.
Ingredients:
Wet:
200g sourdough starter (active or discard is fine)
2 eggs
180g full cream milk
50 g butter melted
Dry:
150g all purpose flour
50g sugar
2 tsp baking powder
1 tsp salt
Simply whisk the wet ingredients together in a bowl. Mix together the dry ingredients in a separate bowl, then add the wet to the dry and give it a quick whisk. While you’re doing this, heat up your waffle iron and then cook away! Don’t over do the batter in the waffle iron – my Kmart one makes roughly 16 waffles, so it only needs a small scoop as it fluffs up as it cooks!
