There’s nothing worse than having a busy day, and getting to lunch time and you’re thinking ‘what am I going to eat?’ You stand for half an hour looking in the fridge, and if you’re calorie counting, you spend an extra 10 minutes plugging everything into MyFitnessPal before food even touches your lips. And if your kids are anything like mine, by the time all of that happens and you sit down with a plate of food – BAM the baby alarm…time to go and be nap trapped for the next 30-60 minutes.
Then dinner time…in our household the kids eat separately because I usually go to F45, and my partner is a shift worker so he prefers to eat around his schedule too. By the time I’m home and the kids are all in bed, its 8pm and the last thing I want to do is start cooking. I want to sit down and have a well earned break thank you very much! So what’s my answer? You’ve guessed it…MEAL PREP!
I usually have a few options on rotation – 4-5 different meals in the freezer that I can choose from for either lunch or dinner. I know what the calorie content is – I’ve already created the recipe in MyFitnessPal so I can just quickly add whichever meal it is I choose. A quick trip to the microwave and my nutrition is sorted.
The beauty of this is you can practically meal prep anything. I even meal prep the kids food – I batch cook bolognese sauce packed full of vegetables and freeze them in ice cube trays. I prep veg loaded sausage rolls, zucchini slice, fritters, even pre cooked pizza bases and veg loaded pizza sauce! All of which I’ll be adding to the recipe library soon!
My favourite meals currently on rotation include veg loaded spaghetti bolognese, Mexican style chicken with rice and black beans, hearty chicken and vegetable stew, sesame pork bowl, and cottage pie.
As an added bonus, by batch cooking, I’m saving both my time and household energy usage by doing it in bigger lots. With this cost of living pressure I’m finding any ways I can to scrimp and save!
